Savory Oven Roasted Potatoes

These roasted potatoes are a good hash brown or home fries substitute for breakfast or brunch, as well as an easy dinner or picnic side dish.


3 lbs. russet potatoes, baked, cut into bite sized pieces

3 T fresh parsley, minced

1 tsp. salt

1/2 tsp. coarsely ground black pepper

1/4 tsp. smoked paprika

1 clove garlic, minced

1 tsp. basil, dried

1/2 tsp. oregano, dried

1/2 tsp. rosemary, dried or fresh (fresh will be much more pungent)

1/4 c. extra virgin olive oil


Toss potatoes with all ingredients and roast for 45 minutes in a 350 degree oven.  Stir occasionally for even browning.
