Mocha Brownie Bites

I promised them brownies.  It’s been soupy around here.  Pretty bland and boring with Mom and Dad on GAPS.  They haven’t suffered and lived treat-free for the last two months, by any means, but I didn’t feel it was healthy to drag them through a detox with us.  They have eaten the soups, sampled the broths, consumed our GAPS vegetable dishes in all their forms, but my all American teen and his almost teen brother were ready for some “toxic sludge”, as we call unhealthy food in this house.

I still wanted to control the amount of goo that I was presenting to them, however, so decided to make brownie bites in a mini muffin pan rather than the enormous pan of 1 1/2″ thick slabs of  brownies I used to make.  Mission accomplished.  Happy boys, but a batch of brownies that lasted four days rather than two, even with teenagers in the house.

They were so cute!  I’ve done a terrible thing, though, and am posting the recipe without actually having tasted the finished product.  Gordon Ramsay would have a fit.  You’ll just have to trust my young chocolate connoisseurs’ opinions on this one.

Ingredients:

1/4 c. brewed coffee, cooled

3 T butter, melted

3 whole eggs

1 c. sugar

3/4 c. all-purpose flour

3/4 c. Hershey’s Special Dark Cocoa (I don’t know how I’m going to give this up.  I’ve just learned that it contains GMOs.  Haven’t done my research, yet, to find out for sure so am closing my eyes and pretending I didn’t read that for the time being.)

1/2 tsp. baking powder

1/2 tsp. Himalayan pink salt

 

Method:

Heat oven to 350 degrees.

Beat the eggs.

Whisk in the coffee and melted butter.

Sift together the dry ingredients.

Add the wet to the dry and fold until they are combined.

Grease mini muffin pans or use mini cupcake papers to line them.

Pour one tablespoon of batter into each hole or paper.

Bake for 10 minutes, less if you want gooey centers.

Pop from the pan and dust with confectioner’s sugar.

Call, “Two babies…(or use the appropriate number for the amount of children that you have).  Brownie bites!”  And hear them come running.   Isn’t it funny that if I call, “Boys…time to do lessons…”, they don’t hear me?

    No, you don’t. I just don’t bother buying the regular cocoa anymore.
