Coconut Shrimp with Pineapple Sauce

Yesterday I wanted Coconut Shrimp from Joe’s Crab Shack, but there is no longer a Joe’s in our area which I can’t understand because the place was always packed.  I guess the economy does funny things.

I decided to make my own.  It was low fat, low carb, sodium and sugar-free of course.  Okay that was a lie.   But it was good, and as it turns out, I don’t need Joe or his shack after all.

Ingredients:

2 dozen 41/60 sized shrimp, peeled and deveined with tails left on

2 c. sweetened, shredded coconut flakes

Vegetable oil– to a two-inch depth for frying

Tempura Batter:

1/2 c. all-purpose flour

6 T cornstarch

1/2 tsp. salt

Just enough very cold water to make a batter.

Pineapple Sauce:

1 c. pineapple juice

6 T raw sugar

1/4 c. crushed pineapple

Big pinch of salt– to taste

Method:

Pineapple Sauce:

Prepare the sauce ahead of time so it will be ready as soon as the shrimp are done frying.

Combine all ingredients in a small saucepan and simmer until sugar dissolves and liquid turns syrupy and reduces, between 5 and 8 minutes.  Allow to cool.

 

Coconut Shrimp:

Butterfly shrimp by cutting along the spine almost through.

Mix together tempura ingredients.

Place coconut in a shallow dish.

Heat oil until a drop of tempura bubbles and fries immediately, between medium and high heat.  If oil sputters and pops reduce the temperature.

Coat shrimp individually in tempura, then dredge in shredded coconut on all sides.

Drop into hot oil and fry 3 to 4 minutes until golden brown.

Remove to absorbent paper.

Serve with the pineapple dipping sauce.

Yield: 4 appetizer servings, 2 entree portions
