Couscous is a tiny, granular pasta common to Middle Eastern cooking. You can use any flavorings you like when making couscous, and many different ingredients can be added to the finished dish or served alongside it.
Ingredients:
1 1/2 c. water
1 1/2 tsp. lemon zest
3 tsp. lemon juice
1 1/2 tsp. salt
1 tsp. butter or extra virgin olive oil
1 c. couscous
3 T raisins or currants
2 T fresh parsley, minced
Method:
Combine water, lemon zest, lemon juice, raisins, parsley, salt, and oil or butter in a medium saucepan.
Bring to a boil.
Add couscous. Remove from heat, cover, and let soak for 7 minutes.
Fluff gently with a fork and serve.
Makes 6 to 8 servings.
