Flourless Chocolate Cake


5 oz. semisweet chocolate pieces

2 1/2 oz. butter cut into small pieces

2 large eggs plus 1 egg yolk

1/4 c. sugar

1 tsp. vanilla extract


Heat oven to 350 degrees.

Oil or butter a 9″ cake pan.

Place butter and chocolate in top of double boiler over simmering water.  Allow to melt.

Combine well.

Whip eggs and sugar with electric mixer until thickened and soft peaks form, approximately 5 minutes, beat in vanilla.

Fold into melted chocolate mixture, gently so volume is not reduced.

Gently scrape into prepared pan.

Bake 30 minutes.

Cool completely and cut into wedges.  Dust with powdered sugar and serve.

Makes 8 very thin wedges.  You can double the recipe if you like for a thicker cake.
