Ingredients:
2 c. lettuce chiffonade
1 c. tomatoes, med. dice
2 c. monterey jack cheese, grated
1 c. sour cream
10 taco shells or tortillas
Taco Meat:
3 T chorizo, minced
1 lb. ground beef
2 T fresh cilantro
1/2 c. greeen bell pepper
1/2 c. onion, small dice
2 cloves garlic, minced
1/2 c. Roma tomatoes, medium dice
Salt & Pepper to taste.
1/2 tsp. cumin
1/2 tsp. cocoa powder
1/4 tsp. cinnamon
1/4 tsp. coriander
2 T extra virgin olive oil
Method:
Heat oil over medium heat and saute’ garlic. Add chorizo and cook for a minute or two. Saute’ onions and peppers until translucent. Add ground beef and spices. Brown until cooked. Drain fat and toss in tomatoes and cilantro. Cook for a few more minutes.
Assemble tacos by placing meat in the bottom, then lettuce, cheese, sour cream and tomatoes.
