We shared our first kiss over chocolate mint milkshakes on St. Paddy’s Day 21 years ago, that man and I. I don’t know where the time has gone. We still feel like that couple of kids. There are moments, however, when we aren’t giggling together. We joke that our marriage is perfect 98% of the year. 1% of the time he’s intolerable, the other 1% I am. Not too shabby, if you ask me. It’s very nice to be married to your best friend.
The first sip of my Irish coffee reminded me of that night and stepping over huge puddles of green beer that had spilled all over the parking lot of the restaurant in which we purchased those minty milkshakes. I’m calling it “After-Eight” because it’s based on the ingredients in an After-Five. With the addition of whiskey, I figured I should wait till after eight to drink mine. I’m such a lightweight!
Ingredients:
16 oz. strong black coffee
1 T Baileys Irish Cream (Or 2 or 3!)
1 T Peppermint schnapps
2 T whiskey
2 tsp. sugar
1 T cream (I used almond milk cream because it was all I had. It was wonderful.)
