My little guy and I were tired of plain old bran flakes for breakfast so, while his brother slept in, we decided to do something more interesting with them this morning. This is what we whipped up. Nice on a chilly December day.
Ingredients:
1/2 c. whole wheat flour
1/2 c. oat bran
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
2/3 c. fresh cranberries
1 c. bran flakes
1/2 c. packed brown sugar
1/4 c. white granulated sugar
1/2 tsp. vanilla
1 T vegetable oil
1 large egg
1 c. milk
1/2 c. plain, fat free yogurt
1/2 c. dried cranberries
Granulated sugar for sprinkling on top of muffins before baking (Optional)
Method:
Heat oven to 425 degrees.
Sift together flour, oat bran, baking powder, salt and cinnamon.
Stir in fresh cranberries.
Mix together bran flakes, sugars, vanilla, oil, egg, yogurt, milk, and dried cranberries. Allow to soak for 10 minutes.
Add all of the dry ingredients to the wet and fold to combine.
Fill paper lined muffin molds.
Sprinkle sugar on the top of each muffin.
Bake for approximately 25 minutes.
Makes 8 to 12 muffins depending on how full you fill the cups. I filled them to the brim and they took 25 minutes in a baking stone muffin pan which cooks a little slower than metal.
