I learned in my college nutrition class how important brightly colored fruits and vegetables are. I started using red cabbage in my cole slaw shortly after to add more nutritional value. The first time I made it, it looked like confetti to me so that’s what I called it, Confetti Slaw.
2 c. green cabbage, shredded
1 c. red cabbage, shredded
1/2 c. green bell pepper, small dice
1/4 c. onion, small dice
1/2 c. carrot, grated
2/3 c. mayonnaise
2 T white vinegar
2 T sugar
1 tsp. salt
1/2 tsp. celery salt
1/4 tsp. coarsely ground black pepper
Whip together dressing ingredients.
Combine with other ingredients.
Allow to meld for 1 + hours.
Yield: 8 servings
