Bonnie Blue-berry Muffins

I’m a huge Gone With The Wind fan.  When Rhett Butler talks about his daughter and says he wants to name her Bonnie Blue, I always think of blueberry muffins and even that girl on Charlie and the Chocolate Factory who turns into a giant blueberry.

Ingredients:

2 c. all-purpose flour

1 c. sugar

1 tsp. salt

1/2 tsp. baking soda

2 tsp. baking powder

3/4 c. fresh blueberries

1/4 c. all-purpose flour for dusting blueberries

2 eggs

1 c. milk

2 T. canola oil

1/4 tsp. finely grated lemon zest

1/2 tsp. vanilla

1/4 c. sugar

Method:

Heat oven to 425 degrees.  Grease a  muffin tin, or insert cupcake papers into muffin cups.

Toss blueberries with 1/4 c. flour to coat.

Sift together 1 c. sugar and the remaining dry ingredients.

Stir in blueberries.

Beat the eggs with the milk and oil.

Stir in lemon zest and vanilla.  Fold the wet ingredients into the dry just until moistened.

Fill muffin cups to within 1/4 ” of the top.

Sprinkle on sugar.  Bake for 20 minutes.  Remove immediately from pan.

Makes 6 muffins.
