This quick party idea is made simple with the use of mini mozzarella pieces. They are really fun to pop in your mouth, and delicious used in salads, especially when marinated in a light vinaigrette overnight. I find them in the specialty cheese case of most of my local grocery stores.
Mini caprese are even tastier when a little dollop of creamy pesto is added to each. Fun finger food for any get-together!
Ingredients:
5 medium Roma tomatoes, sliced into 1/4″ thick rounds
8 oz. Bel Gioso Fresh Mozzarella Pearls
Basil sprig for garnish
2 T basil chiffonade
Salt
Pepper
Extra Virgin Olive Oil
1 clove garlic, minced
Method:
Lay tomato slices out on a serving platter. Top each round with 3 mozzarella pearls. Salt and pepper. Drizzle olive oil over all, then sprinkle with garlic and basil chiffonade.
Garnish with a basil sprig and chill, covered until ready to serve.
Makes 28 to 30 individual appetizers.
